Down in the wine cellar of Hermannhof, they prepared a delightful serving of Braised Beef Short Ribs with Chocolate and Cinnamon. Visitors to the Hermann Missouri area had both a wonderful setting and small taste of a popular dish with a chocolate twist. Hermannhof Winery paired their savory plate with their famous Norton. The dark wine brought out the dark taste of the chocolate perfectly, especially since the ribs were seared to perfection. Braised Beef Short Ribs with Chocolate and Cinnamon
- 3 lbs. beef short ribs
- 3 oz. bacon (about 4 slices)
- 1 cup dry sherry
- 1 qt. beef broth
- 1 onion
- 2 cloves garlic
- 2 oz. bittersweet chocolate
- 5 sprigs thyme
- 2 tbsp flour
- 1 cinnamon stick
- 2 bay leaves
- salt & pepper
Salt and pepper ribs heavily. Brown bacon. Sear ribs in bacon grease. Add onions, cook for 5 minutes. Add garlic and saute’ for 2 minutes. Add flour, cook for 2 minutes. Deglaze with sherry. Add remaining ingredients and cook for 1.5 hours with lid on.
