Star Lane Three Saints Winery mixed things up a bit this year and decided to offer visitors to the Hermann Missouri area with a Ground Pork Ragu with Chocolate. This tasty dish was served on a bed of pasta and paired with their Cabernet Sauvignon. The pork was cooked to perfection and the chocolate gave just a hint of a dark taste. Ground Pork Ragu with Chocolate
- 1 med. onion
- 2 tbsp olive oil
- 1 lb. ground pork
- 1/2 cup dry red wine
- 12 oz. tomato paste
- 1 qt. water
- 2 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1/8 tsp. ground cinnamon
- 1 tsp. sugar
- grated cheese for serving
Saute onion in olive oil in 3-4 qt. sauce pan. Add pork and break up over medium heat until raw color disappears. Add the wine and simmer for a couple minutes over slightly higher heat. Add tomato paste and water; stir and bring to simmer. Add salt, pepper, cinnamon, chocolate and sugar. Stir until chocolate melts, reduce heat and simmer for 30 min. Serve over pasta with grated cheese of your choice.
